Wash a piece of meat fillet and dry it with a paper towel. Cut into rectangular slices 1 - 1.5 cm thick. Beat the meat for rolls well as for chops, using a special hammer or a fiber breaker. At this stage, the meat needs to be salted and peppered. Place everything in a deep bowl and let it rest. In the meantime, prepare everything for the filling.

Rinse the prunes under water and pour boiling water for 5 minutes. Drain the water, dry it and cut it in half lengthwise, without cutting all the way through. Finely chop the onion and fry in vegetable oil until translucent. Grind the nuts on a fine grater or grind them using a blender. The cheese should be grated on a fine or medium grater.

Place the chops on a work surface, place 1-2 tablespoons of sautéed onions on each, and place 3-4 prunes on top.

Sprinkle grated nuts and cheese on top of the prunes.

We prepare another portion of rolls in the same way, only with more cheese and without prunes.

Carefully wrap the fillet along the wide side, not allowing the filling to spill out. Wrap it with thread (or twine). You can also use wooden skewers, just chop the meat in several places.

Place our meat envelopes in a preheated frying pan with vegetable oil and fry until half cooked until golden brown.

Then put them on a baking sheet and send them to the oven, preheated to 180-200 degrees for 40 minutes. 5 minutes before the rolls are ready, they need to be greased with garlic crushed through a press or grated on a fine grater. During the cooking process, prunes impart their sweet and sour flavor to the meat, making the dish very tasty and piquant.

You can prepare such a dish not only in the oven, but also in a slow cooker. First, fry on the “frying” or “baking” program until golden brown, and then bring the dish to readiness with a small amount of wine, broth or cream until done. Either for baking (30-40 minutes) or for stewing (it will take more time, about an hour).

    MEAT ROLLS STUFFED WITH PRUNES
