Pork rolls with filling are a decoration for the holiday table. Of course, if you cook them correctly. So that they not only turn out juicy and tasty, but also even and neat. Ideally, after cutting the roll, the guest should let out an exclamation of amazement. Today we will learn how to cook just such pork rolls with filling in the oven with photos and detailed step-by-step explanations. They are made much easier than you might imagine. The main thing is to know the secrets of technology. The cooking principle is the same, only the filling changes:

1) pork should be taken with a dense, uniform structure (ideally tenderloin),
2) the piece must be at least 15 centimeters thick so that sufficiently wide chops can be cut from it,
3) cut the meat strictly across the grain,
4) you need to beat the meat through the film, then you can beat it as thinly as possible and it won’t tear,
5) we do not pre-heat the meat for the rolls, but the filling, if it is vegetable or mushroom, must be fried or simmered until cooked,
6) so that the rolls do not fall apart and lose their shape, we do not fry them first - we immediately put them in the oven, and brown them at the very end under the grill.

For the first experiment, we will take the most delicious, in my opinion, filling - mushroom with fried vegetables and herbs. We will achieve the effect of a stunning center using the most ordinary green pea ice cream. Having mastered one recipe, you can repeat your success by making pork rolls with different fillings: fruit (pineapples, oranges, prunes, dried apricots are perfect), vegetable (mushrooms, carrots, bell peppers, eggplant), cheese (hard cheese with herbs, mozzarella, feta cheese). In any combination they will be juicy, tender and aromatic.

Ingredients:

  • pork tenderloin – 400 grams,
  • mushrooms (champignons) – 200 grams,
  • medium sized carrots - 1 piece,
  • onion – 1 medium or half a large onion,
  • green peas (fresh or frozen) – 50 grams,
  • greens (dill is best) - 4 sprigs,
  • salt, pepper (to taste)
  • vegetable oil for frying

How to cook pork rolls with filling in the oven

Wash the meat, dry it and cut it across the grain into slices approximately 2 cm thick.


Beat it well with a hammer. To prevent the meat from tearing, it is better to do this through cling film. Add salt.


Peel the champignons and chop finely. Fry in a frying pan until excess moisture evaporates. Cool.


Wash and peel the onions and carrots. Finely chop the onion and grate the carrots. Place in a frying pan, you don’t need a lot of oil - 2-3 tablespoons - heat the stove over medium. Fry, stirring, until the carrots turn yellow and become soft.


Since I use frozen peas, they need to be filled with hot water for a few minutes.


The filling for the rolls is ready, add salt and pepper to taste.

Place a thin layer of fried onions and carrots on each piece of chopped meat, and place a layer of mushrooms on top. To form the core, sprinkle one edge of the meat with chopped dill (you can use any herbs) and place the peas in a row from top to bottom - this will be the center of our roll.


Wrap the meat in a roll, starting from the edge where we laid the peas on a layer of greens. You need to roll it tightly enough, but don’t press too hard!

Place in a heat-resistant bowl, lightly greased with vegetable oil, so that the seams of the rolls are at the bottom. This will prevent our rolls from “unwinding” during baking; you can use toothpicks for security, which must be removed after cooking.


Bake in a preheated oven at 190 degrees for 20-30 minutes until golden brown. At the end of cooking, turn on the grill, if the oven has such a function.


Serve hot! Pork rolls baked in the oven are served as a separate hot dish. They also go well with fried potatoes, mashed potatoes, vegetable sautes, and boiled rice with vegetables.

You will need:

  • salt – 15 g;
  • pork lard – 50 g;
  • garlic – 4 cloves;
  • pork meat – 1 kg;
  • ground pepper, thyme, dried basil and other spices to your taste.

Prepare pork roll baked in the oven:

  1. If you took a meaty piece with a layer of fat, then you don’t need to use lard in cooking.
  2. We cut the meat into long slices. Their thickness should be about 3 cm.
  3. We make punctures in the meat on all sides using a knife and fill the resulting holes with lard.
  4. Remove the skins from the garlic cloves. Press two slices into the mush. We cut the remaining slices into halves and insert them into the slits in the meat.

Recipe with carrots and mushrooms

List of ingredients:

  • salt – 6 g;
  • champignons – 0.2 kg;
  • ketchup – 15 g;
  • two onions;
  • pork – 0.8 kg;
  • dried oregano – 7 g;
  • vegetable oil – 30 ml;
  • a pinch of pepper;
  • two carrots;
  • dried basil – 5 g;
  • three garlic cloves.

How to prepare the roll:

  1. Finely chop the peeled onions. Pass the carrots through a grater. Fry the chopped vegetables in a frying pan with oil.
  2. After 5 minutes, add the mushroom slices and sauté for another 7 minutes.
  3. Dry the washed piece of pork and cut it into 2 cm thick slices. Beat them with a wooden mallet.
  4. We pass the peeled garlic cloves through a press and put the resulting pulp into a cup. Add basil, pepper, oregano and salt to it.
  5. Line a baking sheet with foil and place slices of meat there next to each other.
  6. Sprinkle a mixture of salt and black pepper on them.
  7. Place the roast on top with the addition of mushrooms.
  8. Roll up the roll and secure it with foil.
  9. Place the pan in an oven preheated to 200 degrees.
  10. Bake the meat delicacy for about an hour, then pour ketchup on it and cook for another 15 minutes.

Pork roll with prunes, baked in the oven

  • pork meat – 0.5 kg;
  • head of garlic;
  • prunes – 200 g;

  • pork tenderloin – 0.5 kg;
  • cheese – 55 g;
  • sunflower oil – 40 ml;
  • peeled pistachios - 50 g;

Algorithm of actions:

  • cranberries – 120 g;
  • salt to taste;
  • cognac – 55 g;
  • pork meat – 1.5 kg.

Step by step instructions:

  1. Place dried cranberries in a bowl and pour cognac.
  2. Leave the product for 40 minutes.
  3. We form a thin plate from a piece of meat and beat it.
  4. Sprinkle thyme, salt and pepper on top.

  8. Cook a delicious, aromatic dish in the oven for 40 minutes.

Italian style meatloaf with ham and peppers

Ingredients for marinade:

Olive oil - ¼ cup
Balsamic vinegar - ¼ cup
Crushed garlic - 2 cloves
Chopped parsley - 2 tbsp. l.
Black pepper - ¼ tsp.

For the meatloaf:

Steak - 600 g
Roasted sweet pepper - 350 g
Chopped parsley leaves - 3 tbsp. l.
Prosciutto - 10 slices
Basil leaves - 24 pcs.
Grated Parmesan - 3 tbsp. l.
Black pepper - ¼ tsp.

Preparation:

1. For the marinade: combine all ingredients and mix well. Set aside.
2. Cut the meat in half lengthwise, not cutting 1 cm to the end. Unfold it like a book. Place the steak in a pan, pour in the marinade and refrigerate overnight.
3. Preheat grill to medium heat. Place the pepper halves on the surface of the meat, sprinkle with 1 tbsp. l. parsley Top with ham slices, basil leaves and Parmesan along with the remaining 2 tablespoons parsley and pepper.
4. Roll the meat into a roll. Every 4-6 cm, fasten the roll with culinary thread. Grill steak, turning frequently, until desired doneness. Transfer the cooked steak to a cutting board, cover with foil and let rest for 10 minutes. Remove cooking string, slice meat and serve.

Butternut Pumpkin Meatloaf

Ingredients:

Whole piece of pork or beef - 1 kg
Pumpkin pulp - 120 g
Walnuts - 80 g
Garlic - 4 cloves
Chili pepper - ½ pc.
Salt, black pepper - to taste

Preparation:

1. Place the meat on a cutting board.
2. Make a cut in the center along the fibers, not reaching the bottom ½ cm. Spread the meat with your hands and make deep transverse cuts inside the pieces of the layer on the right and left, along, not reaching ½ cm to each edge. Open the piece of meat like a book.
3. Cut thickened areas, if any, cover the meat with film and beat with a hammer so that the thickness of the layer is from 5 mm to 1.5 cm, depending on the size of the piece itself.
4. Prepare the filling.
5. Grind pumpkin, nuts, garlic and chili using a blender. Salt and pepper the filling to taste.
6. Rub the meat, prepared as described above, with salt and pepper. Spread the filling on the meat, smooth it out, roll it up.
7. Place the roll in the baking sleeve and secure the sleeve according to the instructions on the package.
8. Bake in an oven preheated to 190–200 degrees for 35–40 minutes or until done.

Meatloaf with porcini mushrooms

Ingredients:

Minced beef - 500 g
Tofu cheese - 200 g
Egg - 1 pc.
Frozen chopped porcini mushrooms - 600 g
Milk 0.5% - 1 glass
Oatmeal - 4–5 tbsp. l.
Salt, pepper - to taste
Dried herbs - to taste

Preparation:

1. Stew the mushrooms in milk until tender (about 30 minutes), add salt during the process. 3-5 minutes before readiness, add 4 tablespoons of oat bran. Let cool.
2. Preheat the oven to 200 degrees. Mix minced meat, tofu, egg and spices. Sprinkle a sheet of baking paper with oat bran.
3. Place the resulting mixture of minced meat, tofu and eggs on top in a rectangular layer 5 mm thick. Distribute the mushroom filling on top of the layer. Carefully wrap the roll. Bake in the oven until golden brown, about 30-40 minutes.

Ingredients:

Pork pulp - 500 g
Prunes - 100 g
Salt, pepper - to taste

Preparation:

1. Pour hot water over the prunes and leave for half an hour. Then drain the liquid and rinse the dried fruits.
2. Wash the pork, cut into slices 6–7 mm thick. Lightly pound the meat, add salt and pepper to taste. Place 2-3 prunes on each piece. Roll the meat into rolls and secure with toothpicks. Season with salt and pepper as desired.

Gourmet meatloaf

Ingredients:

Pork tenderloin - 2 kg
Ham - 300 g
Chicken eggs - 2 pcs.
Pears - 2 pcs.
Pickled cucumber - 1 piece
Walnut kernels - 1 tbsp.
White wine, salt, spices, vegetable oil

Preparation:

1. Prepare the pork: wash the meat thoroughly and dry with a towel. Marinate for 2 hours in dry white wine with salt and pepper. Dry again. After this, use a sharp knife to cut the meat into a “book” shape.
2. Peel the nut kernels and bake them in a frying pan for 10 minutes. Grind half of it in a coffee grinder to a fine crumb. Mix the ground nuts with the egg until you get a homogeneous mass. Add whole nuts, pear and cucumber slices and mix again.
3. Place a layer of thin slices of ham on the meat. Then add the nut filling, after adding a little salt and pepper. Roll the meat into a roll. Twist the rolls using kitchen string.

Turkey fillet - 350 g
Garlic - 5 cloves

Pork ham or shoulder - 1.5 kg
Garlic - 3 cloves
Spicy Italian herbs - 2 tsp.
Salt, pepper - to taste
Vegetable oil - 2 tbsp. l.

Preparation:

1. Wash the meat, dry it and lightly beat it.
2. Pass the garlic through a press. Rub the meat with spices, herbs and garlic, leave to marinate for an hour.
3. Roll the meat into a tight roll and tie with kitchen string.
4. Place the roll on a foil-lined and greased baking sheet.
5. Place in the oven, preheated to 180 degrees, and bake for about 2 hours, basting with meat juice.

Meatloaf with vegetables

Ingredients:

Pork or beef without bone - 2 kg
Carrots - 350 g
Sweet pepper - 1 pc.
Spinach - 1 bunch
Cheese cheese - 150 g
Garlic - 2–3 cloves
Bay leaf - 2 pcs.
Salt, pepper - to taste
Vegetable oil - 2 tbsp. l.

Preparation:

1. Wash the meat and place it on a work surface. Using a sharp knife, make a deep cut in the center along the fibers, not reaching the very bottom, about 1–1.5 cm. Push the cut apart with your hands. Cut the right half across the grain into 2 parts, 1 cm short of the edge. Open like a book. Cut the left half in the same way.
2. Peel the carrots. Place in boiling salted water for 3-4 minutes. Then drain in a colander and rinse with cold water.
3. Remove the seeds from the red pepper and cut it into long strips.
4. Wash and chop the spinach. Rub the meat with salt, pepper and crushed garlic. Place carrots, peppers, crumbled feta cheese and spinach on the meat, wrap in a roll. Tie the roll with culinary thread and grease with vegetable oil.
5. Place the roll in an oven preheated to 180 degrees and bake for about an hour.
6. Before serving, cool the meat slightly, remove the cooking thread and cut into thin slices.
