There are a huge variety of recipes for dishes based on pancakes. Pancake is a traditional element of our cuisine. It is clear that options for preparing pancakes, pancakes with different fillings, are so popular. And today I will tell you an interesting recipe for an excellent holiday snack - pancakes with caviar. Yes yes, this is the way to cook those famous pancakes with red caviar.

So, we need red caviar for the filling.

Well, let's make pancakes. To do this, break 2 chicken eggs into a bowl. Pour in a tablespoon with a small heap of granulated sugar, as well as, literally, a pinch of salt.

Beat the eggs with a whisk or mixer.

Add a couple of tablespoons of sunflower or olive oil to the bowl. Beat again. Then pour 500 ml of milk into a bowl. Beat again.

We have created the basis for the pancake dough. Now add flour, little by little. Gradually beat.

As a result, you need to get a fairly liquid dough, at the same level as the consistency of liquid sour cream. Then you will get exactly the thin pancakes that you need.

Let's move on to frying pancakes. Heat a large frying pan. Let's heat up the oil. Take the dough with a ladle and pour it into the frying pan.

Usually, the first one is lumpy, but the second one is better. The third one is already quite good. Turn the pancakes over with a spatula and fry on both sides.

And so we make pancakes from all the dough.

Meanwhile, caviar was crying over the pancakes.

So, there are two approaches, a simple one and a more complex one, more sophisticated. It is clear that you can simply spread a thin layer of caviar on the pancake, wrap the pancake in a tube and it will roll perfectly, like an appetizer. However, you can modernize the recipe for pancakes with caviar, complicate it somewhat, and improve it.

For our upgrade, we will need, in addition to pancakes and caviar, soft curd cheese and a can of pitted olives.

Spread the pancakes with a thin layer of cream cheese over the entire surface.

And roll the pancakes into tubes.

Cut the rolled pancakes into small pieces, ala.

It turns out something like this.

Take a jar of large pitted olives. Cut the olives into strips.

We put caviar on each piece of pancake, making a kind of cap. And decorate the top with pieces of olives.

Ingredients:

  • red caviar – 15 tbsp. spoons
  • eggs - 3 pieces
  • sugar – 1 tbsp
  • salt – 1/2 teaspoon
  • flour – 1.5 cups
  • vegetable oil – 1.5 tbsp
  • cream 10% – 100 ml
  • water – 350 ml
  • vegetable oil – 5 tablespoons.

Preparation:


  1. It is better to take 18% cream, then the pancakes will turn out richer. There is enough water in the recipe so that the dough does not turn out greasy. Rinse the eggs thoroughly under running water and break them into a separate container. Be sure to check the contents, remove small shell fragments, and then add to the bowl with cream.

  2. Place the sugar in the container with the ingredients. The pancakes should turn out slightly sweet to better highlight the flavor of the salty caviar.
  3. Add flour, preferably sift it to saturate it with oxygen. The royal pancakes should turn out fluffy and soft. Don't forget to add salt.

  4. Add some water and vegetable oil. Mix thoroughly, whisking lightly. You can use a mixer, but be careful not to splash the liquid part of the dough. When the mass becomes elastic and the lumps disappear, pour in the rest of the water and stir gently with a ladle. Leave the dough in a warm place for 10 minutes to mature.

  5. Heat a pancake pan. Take a silicone brush, dip it in vegetable oil and brush the surface of the dish. Pour in a portion of the dough and fry over moderate heat for 1-2 minutes.

  6. To avoid damaging the pancake when turning it over, pry the edge with a toothpick and lift it up a little, then you can easily place the spatula under the golden circle. When the pancake is fried, place it on a plate. There is no need to re-grease the pan. If the surface is dry and without a single sheen of fat, you can add a little vegetable oil to the dough.

  7. Carefully place the finished pancakes in a stack, cover with gauze or a waffle towel so that they do not steam and dry out. To make the royal snack more nutritious and tasty, melt a piece of butter and brush each pancake.

  8. Place one tablespoon of caviar on the pancake, spread it over the entire golden surface, stepping back a centimeter from the edges. Roll the aromatic product into a tube and place on a plate. To make the snack look presentable, trim the ends. Red caviar can be served separately by placing it in a beautiful transparent container with ice.

Note to the owner:

  • To make the pancakes more delicious and flavorful, add a couple of tablespoons of melted butter to the dough.
  • You can knead the dough using milk, but you should not use water or other liquid as a base. The product will acquire a grayish tint and become rubbery.
  • Pancakes should not be too thin, because such a snack requires a more fluffy product. If you pour too much batter into the pan, it won't have time to bake.
  • Choose red caviar carefully. Buy in bulk no later than January. The delicacy should slowly slide off the walls of the jar, and each egg should burst in the mouth when pressed. If the product is chewed and sticks to the palate and teeth, it means it was prepared from gelatin and various additives. If the caviar is dark and dense, it means it was taken from non-living fish.
  • When choosing caviar in metal cans, pay attention to the month of production: the delicacy is closed exclusively in September or October. The numbers on the lid are convex only on the outside. Choose caviar from Kamchatka and Sakhalin producers.

Carnival- this is one of the ancient Slavic holidays, which is difficult to imagine without pancakes in any home. The filling of the pancakes can be absolutely different; in our case it will be caviar. Caviar is rich in nutrients and vitamins, and also tastes good, especially when served in freshly baked pancakes.

Pancake boats with red caviar and cream cheese

Ingredients:

  • 0.5 l kefir
  • 3 pcs. eggs
  • 1/2 tsp. salt
  • 3 tbsp. l. Sahara
  • 1/2 tsp soda
  • 1 tbsp. l. oils
  • 2.5 cups flour
  • Cream cheese
  • Red caviar

Preparation:

  1. Combine kefir, eggs, salt, sugar, soda, butter and sifted flour. Mix the dough well.
  2. Heat a frying pan, grease it with oil and bake thick pancakes. Let them cool a little and form boats: place soft cream cheese with a teaspoon in the center of the pancake, secure the edges with toothpick halves and place red caviar (one or two teaspoons) on top.
    And your pancake boats are ready!

Pancakes on a skewer with red caviar

Ingredients:

  • 500 ml kefir
  • 1 egg
  • 1 tbsp. l. Sahara
  • 1 tbsp. l. oils
  • 1.5 cups flour
  • 1 tsp. soda
  • 150–200 ml very hot water

Preparation:

  1. Beat the egg with sugar, add kefir and butter. Gradually add sifted flour and soda to the mixture, beat and leave for 10-15 minutes. Add water and bake thin pancakes.
  2. When the pancake has cooled down, spread it with cream cheese, put caviar on top, roll it up and cut it into portions. Place these pieces on a skewer and you will get a full portion for each guest.
    Serve with dill and lime.

Pancake bags with red caviar

Ingredients:

  • 2–2.5 cups flour (buckwheat or wheat)
  • 30 g butter
  • 500 ml milk or cider
  • 2 pcs. eggs
  • 2 tbsp. l. Sahara
  • 1/2 tsp. salt

Preparation:

  1. Knead the dough and bake small pancakes in butter (take about a tablespoon of dough for one pancake). Place caviar in the middle of each pancake and gather the edges together to form a pouch.
  2. Carefully tie the bag with a feather of green onions, herbs or a cheese braid. This is one of the most beautiful and easiest ways to serve pancakes.

The dough for making these pancakes was chosen to be the simplest and I will be happy to share it with you. Break the eggs and mix them with salt, sugar, soda, then add milk and flour.

Knead the dough until we get the consistency of liquid sour cream. The resulting dough can be left to stand for half an hour, this will make it even better.

Everyone has their own technique for frying pancakes. I personally fry without any oil in a dry, well-heated frying pan. You can add oil to the solution itself, but not much, about one tablespoon. When pouring pancake liquid into a frying pan, it is better to hold it in your hand over the stove, this will make it more convenient to distribute the liquid over the entire surface. You should not pour too much solution, for example, two ladles, the pancake will be thick and then you will not be able to wrap the filling in it. It is best to take one incomplete ladle. You should turn the pancake over to the other side when it dries on the visible side. Help yourself with a spatula, maybe even two. The coup is made with a sharp movement. In principle, if you get the hang of it, you will even enjoy frying pancakes.

Thus, from the dough we mixed, we get such a stack of pancakes; if you want more, just increase the composition of the ingredients.

Now let's move on to filling and rolling our pancakes. To do this, we need this kind of curd cheese; it will be processed or processed; in principle, it doesn’t matter, it’s a matter of taste. The main thing is that it spreads well on the pancake.

After greasing, wrap the pancake in a tight tube.

Then we roll this tube into such a shell, and to keep it in place we tie it with one of the strings of the cheese braid.

We put a spoonful of red caviar on top and the pancake is basically ready to serve. It looks quite chic and original, although there is nothing complicated.

Now I will show you the second method of wrapping pancakes. Here we will have caviar inside along with cheese.

We fold the edges of the pancake together and tie it with green onions; if there are none, you can use the same cheese braid. The pancake now looks like a small but very tasty bag.

In fact, you can experiment with the presentation yourself and come up with something of your own. But you can use my idea, because you will agree, it looks very appetizing.

For those who do not like large portions and prefer the XXS size, I can offer pancakes in the form of rolls. They are made quite simply. Grease the pancake with cheese, roll it into a tube and cut into small rolls. We will also tie them with a cheese braid, and decorate the top with caviar and a small stalk of green onion.

Pancakes stuffed with such an expensive but indecently tasty delicacy can be seen on almost every table during Maslenitsa. Anyone can prepare pancakes with caviar, and you won’t have to rack your brains about how to treat the most demanding guests, because such pancakes are truly a royal dish. It would seem that something new can be invented? After all, pancakes with caviar were and will remain pancakes with caviar, no matter how we wrap them and no matter how we decorate them. However, pancakes prepared according to different recipes and stuffed with the same caviar can have completely different tastes; in addition, there are many delicious caviar-based fillings, which we invite you to get to know better.

Ingredients:
50 ml vegetable oil,
50 gr. butter,
50 gr. Sahara,
3 eggs
500 ml milk,
250 gr. wheat flour,
200 gr. red caviar,
salt.

Preparation:
Break the eggs into a deep bowl, add sugar, salt and 250 ml of milk. Whisk the resulting mixture. Gradually add all the flour to the dough, mixing thoroughly and trying to avoid the appearance of lumps. When all the flour is in the dough, add the remaining milk and vegetable oil. Stir again. Bake pancakes from the resulting dough. Place 1 heaped teaspoon of caviar into each pancake, distribute evenly throughout the pancake and wrap it in a corner.

Pancakes with caviar and tomatoes

Ingredients:
several thin pancakes,
200 gr. red caviar,
50 gr. frozen butter,
1 tbsp. sour cream for each pancake,
1 cherry tomato for each pancake,
a bunch of green onions.

Preparation:
We reduce the diameter of each pancake by about a couple of centimeters to make an even circle. Finely chop the onion. Grease the middle of a small pancake with sour cream, add 1 teaspoon of caviar in a heap, add a little green onion. Cut the cherry tomato into 8 pieces and place them around the mound of caviar. Carefully gather the edges of the pancake and tie them with pancake ribbon from the cut edge. Grate the frozen butter on a coarse grater. Place the pancake bags on a plate, sprinkle with grated butter and garnish with green onions.

2-3 tbsp. flour,
½ tsp. baking powder,
½ tbsp. milk,
2 tbsp. vegetable oil,

Preparation:

Prepare pancakes from the resulting dough. Mix sour cream with horseradish and lemon zest. Brush each pancake with the resulting mixture and roll into a roll. Cut the roll diagonally into pieces of approximately 2 cm. Place ½ tsp on each roll. caviar and sprinkle with finely chopped green onions.

Pancakes with cod roe

Ingredients:
5 eggs
½ tsp. Sahara,
1 tsp grated lemon zest,
1 tbsp. flour,
2 tbsp. milk,
1 ½ tbsp. water,
vegetable oil,
bunch of lettuce leaves,
50 gr. cod roe,
3-4 tbsp. mayonnaise,
1 tsp spicy ketchup,
½ tbsp. cream,
1 bell pepper,
½ tsp. paprika,
salt.

Preparation:
Grind 3 eggs, sugar and salt with finely grated zest, add milk and water and stir everything thoroughly. Stirring constantly, add flour and ¼ tbsp. vegetable oil. Mix thoroughly, trying to remove all lumps. Bake pancakes from the resulting dough. Separately, beat the remaining 2 eggs with cream and paprika, add a little salt. Pour the resulting mixture into a hot frying pan greased with vegetable oil. Fry the omelette on both sides until golden brown, then cool and cut into small pieces. Cut the bell pepper into thin strips. Mix caviar with mayonnaise and ketchup. Wash the lettuce leaves and dry them. Grease the pancakes with a mixture of caviar and mayonnaise, top with lettuce, bell pepper and egg omelet. Roll the pancakes into rolls, cut off the uneven edges and leave in the refrigerator for 30 minutes.

Ingredients:

1 avocado,
1 jar of caviar,
cream cheese,
rice.

Preparation:
Spread each pancake with cream cheese and place a thin layer of rice on top. Cut the avocado in half, remove the pit and cut into very thin slices. Place avocado slices on rice, add caviar and distribute it evenly over the pancake. Roll the pancake into a tight roll, cut off the uneven edges and cut each roll into 3-4 pieces. Decorate each resulting roll with a small amount of caviar.

Preparation:

Rub the cottage cheese through a sieve or grind in a blender. Finely chop the greens and add them to the cottage cheese, add sour cream and mix thoroughly. Cut the salmon into very small pieces. Grease each pancake with curd mixture, place lightly salted salmon on top and spread it over the pancake in a thin, even layer. Roll each pancake into a roll and cut each roll into 3 parts.
